Aamras Puri | Recipe No. 113

In India everyone is crazy about mangoes. First thing which comes to our mind during mango season is Aamras.

Basically Aamras is a mango juice which is prepared by grinding mango pulp with sugar and milk. Other ingredients are also added like saffron, cardamom, dried ginger to give some flavor to Aamras. It is very popular in some parts of India like Maharashtra, Gujarat and Rajasthan. There are different types of mangoes available in India. Alphonso and Kesar mangoes are highly recommended for making Aamras.

Aamras is served basically with plain rice. But in Gujarat Aamras Puri is very popular dish which is prepared in every Gujarati household. In this recipe chilled Aamras is served with piping hot Puris.

Ingredients –

Aamras (Mango Juice)

  1. Mango – 1 Kg
  2. Milk – 1 Cup
  3. Sugar – ¾ Cup (Quantity of sugar depends on the sweetness of mango)
  4. Water – ½ Cup

Puri

  1. Wheat Flour – 2 Cups
  2. Salt – Pinch
  3. Water – ¾ Cup or as required to knead tight dough
  4. Oil – 1 Tsp. + For Deep Frying Puris

Instructions

Puri

  • Take a mixing bowl and add in wheat flour, salt and water and knead tight dough.
  • Apply oil on dough and cover it and keep it aside for 15 minutes.

  • After 15 minutes, knead dough once again and divide it into small flattened balls.
  • Take a ball at a time and roll it with the help of rolling pin.
  • Roll all balls like this and then deep fry them.
  • Puris are ready.

Aamras (Mango Juice)

  • Peel skin of mangoes and cut them into small pieces.
  • Add mango pieces in the grinder jar along with milk, sugar and water and grind them. (Consistency of Aamras should not be too runny as mango juice tastes the best when it is of thick consistency)

  • Mango Juice is ready. Serve it with Hot Puris

Veg Mayonnaise Sandwich is one of the healthy options among all veg sandwich recipe. It is very easy recipe that can be prepared in very few minutes with very few ingredients. It can be a perfect healthy breakfast recipe. These sandwiches can also be served with evening tea or can be packed in kid’s lunch box. These sandwiches are prepared without toasting bread but if you want you can toast the bread (For that first toast the bread and then spread the mixture). I have used basic eggless mayonnaise but if you want you can use any type of flavored mayonnaise also.

Serving – 8 Sandwich

Ingredients –

  1. Finely Chopped Cabbage – 1 Cup
  2. Grated Carrot – 1 Cup
  3. Sweet Corn Kernels – ½ Cup
  4. Veg Mayonnaise – 1 Cup
  5. Lemon Juice – 1 Tsp.
  6. Salt to Taste
  7. Black Pepper Powder – 1 Tsp.
  8. Bread Slices – 16 Slices

Instructions –

  • Take veg mayonnaise in a big bowl and add all ingredients (except bread slices) in it and mix well and prepare a mayonnaise mixture.

  • Cut edges of the bread and take two bread slices at a time.
  • Spread mayonnaise mixture on one slice and cover it with another slice.
  • Cut sandwich diagonally into two parts.

  • Serve Mayonnaise Sandwich with tomato ketchup.

Notes –

  1. Vegetables like onion, green, yellow or red bell pepper can also be added. One can add vegetable as per choice.
  2. I have used white bread but brown or multi grain bread can also be used.

Pasta in Red Sauce | Recipe No. 104

My today’s recipe is Pasta in Red Sauce.

Pasta in red sauce is a pasta recipe prepared using tomato puree. It is very healthy recipe for kids as lots of vegetables are used to prepare it. It is very easy and delicious recipe. The red sauce is made using fresh tomatoes which are ripe, red and less tangy, vegetables of your choice and herbs. In herbs I have used oregano. If you have basil leaves or Italian seasoning then you can use them.

Serving – Will serve 6 people

Ingredients –

  1. Penne Pasta – 100 Gms.
  2. Fusilli Pasta – 100 Gms.
  3. Finely Chopped Onions – 1 Cup
  4. Finely Chopped Capsicum – 1 Cup
  5. Tomatoes – 750 Gms.
  6. Crushed Garlic – 1 Tbsp.
  7. Salt to Taste + 1 Tsp.
  8. Black Pepper Powder – 1-2 Tbsp.
  9. Oregano – 2 Tsp.
  10. Red chilli Flakes – 1 Tbsp.
  11. Tomato Ketchup – ½ -1 Cup
  12. Oil – 2 Tbsp. + 5 Tbsp.
  13. Water for boiling pasta

Instructions –

  • Boil water in a pan and add in 2 tbsp. oil and 1 tsp. salt.
  • Add in penne and fusilli pasta and allow them to cook.

  • When pasta is cooked, strain water from it and wash cooked pasta from cold water and keep it aside.
  • Boil water in another pan and add in tomatoes and allow them to blanch.
  • When skin starts to leave the tomatoes, switch off the flame and remove tomatoes from water.
  • Allow tomatoes to cool down completely and then remove the skin and blend them to a fine puree.

  • Heat oil in a pan and add in crushed garlic and sauté it for 2 minutes.
  • Add in finely chopped onions and capsicum and sauté them for 10 minutes.
  • Now add in tomato puree, salt, black pepper powder, oregano and red chilli flakes and mix all ingredients well and allow the sauce to cook till the oil starts to leave the sides of pan.

  • Now add in boiled pasta and mix everything very well so that the red sauce coats the pasta very well.
  • Garnish the pasta with some grated cheese and serve.

Notes –

  1. You can use any type of pasta like spaghetti paste, farfalle pasta or shell pasta.
  2. You can add veggies as per your choice or even you can skip it.
  3. Use tomatoes which are ripe, red and less tangy.
  4. You can adjust spices according to your taste.

My Today’s recipe is POTATO PANCAKES

Potato Pancake is a pancake recipe made of grated potato or mashed potatoes. These pancakes are often seasoned with onion, cheese, spices and garlic. This is the best way to use up leftover mashed potatoes. The recipe is very simple yet very tasty. The best way to enjoy these pancakes is when they are fresh and crispy.

Serving – Will make 12-15 Pancakes

Ingredients –

  1. Potatoes – 750 Gms.
  2. Thinly Sliced Onions – 2 Cups
  3. All Purpose Flour – 1 Cup
  4. Black Pepper Powder – 2 Tbsp.
  5. Salt to Taste
  6. Oregano – 1 Tsp.
  7. Oil

Instructions –

  • Grate potatoes with the help of a grater or a food processor and squeeze excess water with the help of hands.

 

  • Now add all – purpose flour, thinly sliced onions, black pepper powder, salt and oregano in grated potato and mix.

  • Apply oil on flat tawa and place ¼ cup of mixture on it and press it with spatula to make ½ inch thick pancake.
  • When bottom of pancake turns golden brown, turn it upside down.
  • When both the sides of pancake turn golden brown remove it from the tawa.

  • Potato Pancakes re ready. Serve it with tomato ketchup or mint and coriander chutney.
