Onion Parantha | Pyaaz ka Parantha | Recipe No. 82

There are many varieties of parantha which you will get in India like aloo parantha, lauki parantha, paneer parantha, onion parantha etc. Paranthas are very easy and quick recipe which you can make for breakfast or lunch or dinner. You can have these parantha with plain curd or any type of raita or green chutney or tomato ketchup.

Today’s recipe i.e. onion parantha is a whole wheat flat bread stuffed with onion mixture. It is a very basic recipe which you can prepare easily with the ingredients easily available at home.

Serving – 10 Paranthas

Ingredients –

  1. Wheat Flour – 2 Cups
  2. Ghee (Clarified Butter) – 1 ½ Tbsp. + For Cooking Parantha
  3. Salt – 1 ½ Tsp.
  4. Water for Kneading Soft Dough
  5. Finely Chopped Onions – 3 Cups
  6. Finely Chopped Green Chilli – 1 Tbsp.
  7. Gram Flour (Besan) – ½ Cup
  8. Red Chilli Powder – 2 ½ Tbsp.
  9. Salt to Taste
  10. Turmeric Powder – ¼ Tsp.
  11. Garam Masala – 1 Tsp.

Instruction – 

  1. Take wheat flour in a bowl and add in salt and ghee.
  2. Knead soft dough with the help of water and cover it and keep aside.
  3. Take finely chopped onions in a mixing bowl.
  4. Add in finely chopped green chillies, red chilli powder, salt, turmeric powder and garam masala.
  5. Mix all ingredients properly.
  6. Add in gram flour and mix properly as such onions are nicely coated with gram flour.
  7. Divide dough into small balls.
  8. Take one ball at a time and dust flour on the dough ball.
  9. Roll the dough with the help of a rolling pin to a circle of 3-4 diameters.
  10. Place 2 tbsp. of onion stuffing in center of circle and cover it with the dough and press it gently and roll it again to give shape of parantha.                            
  11. Heat flat pan and put Parantha on it and cook from one side and flip it and cook another side with the help of ghee till it changes color to golden brown.
  12. Onion Parantha is ready. Serve it with curd or green chutney or tomato ketchup.

Notes –

  1. Cut onions finely else it will be difficult to roll the paranthas.
  2. After preparing onion mixture make paranthas immediately otherwise onions will leave their moisture and it will be difficult to roll parantha.

Sandwiches are very popular food item in India. These are available in number of varieties both vegetarian as well as non-vegetarian. Aloo Matar Sandwich is very delicious and popular dish in India which you will find with every sandwich wala (Sandwich Vendor) in India. It is an amazing recipe which is liked by everyone. It is very yummy street food which is popularly known as Bombay Masala Sandwich.

It is very easy and quick recipe which requires easily available ingredients such as potatoes, green peas, some spices and bread and butter. These sandwiches are best served for breakfast or with evening tea or you can have them during dinner also when you want to have something light. These sandwiches can be prepared in sandwich griller or on gas toaster or on plain tawa. These sandwiches can be served with tomato ketchup or green chutney or with both.

With these sandwiches I have beautiful memories. There is a place in Udaipur (where I live) i.e. Fatehsagar Lake (very beautiful place to visit), me and my family used to go there on every Sundays and sit there for long and use to order these sandwiches. It was fixed. Means going to Fatehsagar we have to order these sandwiches. We enjoyed every Sunday evenings with these sandwiches and we never get bored.

Servings – 12 Sandwiches 

Ingredients –

  1. Boiled and Mashed Aloo (Potatoes) – 4 Cups
  2. Matar (Peas) – ½ Cup
  3. Oil – 4 Tbsp.
  4. Asafoetida – Pinch
  5. Mustard Seeds – ½ Tsp.
  6. Cumin Seeds – ½ Tsp.
  7. Fennel Seeds – ½ Tsp.
  8. Finely Chopped Green Chilli – 1 Tbsp.
  9. Salt to Taste
  10. Red Chilli Powder – 3 Tsp.
  11. Turmeric Powder – ½ Tsp.
  12. Coriander Powder – 1 ½ Tsp.
  13. Garam Masala – 2 Tsp.
  14. Bread Slices – 24
  15. Butter

Instructions

  1. Heat oil in a pan.
  2. Add asafoetida, mustard seeds, cumin seeds and fennel seeds.
  3. When seeds crackle add in finely chopped green chillies and sauté them for 2 minutes.
  4. Add peas and cook them until they are 75% soft.
  5. Add in mashed potatoes and mix.
  6. Add in red chilli powder, turmeric powder, coriander powder, garam masala and salt.
  7. Add around 3 tbsp. of water and mix all ingredients properly.
  8. Allow potato masala to cool down completely.
  9. Take 2 bread slices at a time and spread potato masala on one bread slice and cover it with another bread slice.
  10. Apply butter on gas toaster and place sandwich on it and apply butter on top of it.
  11. Toast sandwich from both sides. Toast one side of sandwich for 2 minutes and roll toaster and toast other side for 2 minutes. Just open and check whether sandwich is ready from both sides. If not then toast it again for few more minutes.
  12. Aloo Matar Sandwich is ready. Serve it with onion rings, tomato ketchup and mint and coriander chutney.

Notes –

  1. I have prepared this sandwich on gas toaster. If you want you can grill it also.
  2. Spices can be adjusted according to your taste.
  3. Instead of butter you can use clarified butter (ghee) also.

Maggi Maggi! Everyone’s favorite 2 Minute Maggi Noodles. We Indians can’t live without maggi. In every Indian Household you will find atleast 1-2 person who loves maggi. Maggi can be prepared in number of ways. Everyone has its own version of making maggi. There are number of varieties which you can prepare from maggi like plain maggi, vegetable maggi, maggi pakode, maggi cutlets, maggi sandwich and many more.

It is enjoyed by each and every person from kid to adult. This is the recipe which anyone can cook. Even a person who doesn’t know cooking can cook this recipe without any guidance. Today I am sharing my version of maggi i.e. CHEESY TADKA MAGGI.

Serving – 1

Ingredients –

  1. Finely Chopped Onion – ¼ Cup
  2. Finely Chopped Capsicum – ¼ Cup
  3. Oil – 2 Tbsp.
  4. Maggi – 1 Packet
  5. Tastemaker – 1 Packet (You will find inside maggi packet)
  6. Maggi Masala-e-Magic – 1 Packet
  7. Salt
  8. Cheese – 1 Cube
  9. Water – 1 ½ Cups

For Tadka

  1. Butter for Tadka – 2 Tbsp.
  2. Crushed Garlic – 1 Tbsp.
  3. Red Chilli Powder – 1 Tsp.

Instructions –

  1. Heat oil in a pan and add finely chopped onions and sauté them.
  2. Add finely chopped capsicum and cook them also.
  3. Now add water and allow it to boil.
  4. Add maggi, tastemaker, salt and maggi masala-e-magic in water.
  5. Mix all ingredients properly and allow it to cook.
  6. Cook till water gets absorbed by maggi.
  7. For tadka, heat butter in a pan and add crushed garlic and red chilli powder and cook them.
  8. Put maggi on a serving plate and grate one whole cube of cheese on it.
  9. Top cheesy maggi with tadka and serve hot.

Tricolor Dhokla | Tiranga Dhokla | Happy Republic Day | Recipe No. 76

Today is 69th Republic Day of India. Happy Republic Day to all my blogger friends.

To mark this occasion I have made Tricolor Dhokla. What Tricolor means. Tricolor consists of three colors i.e. Saffron (Upper Layer), White (Middle Layer) and Green (Lower Layer). Each color has its own significance.

Upper Layer i.e. Saffron Color symbolizes Strength and Courage of Country. Middle Layer i.e. White Color symbolizes Peace and Truth. Middle Layer has one Chakra i.e. Ashok Chakra. Lower Layer i.e. Green Color symbolizes Fertility, Growth and Auspiciousness of the Land.

Tricolor Dhokla is very delicious lip smacking snack recipe which is very easy and simple to make. No artificial color has been added to dhokla. Colors given to dhokla are from easily available ingredients at our home.

Serving – 25-30 pieces of Dhokla

Ingredients –

  1. Suji (Semolina) – 3 Cups
  2. Curd – 3 Cups
  3. Salt to taste
  4. Baking Soda – 1 ½ Tsp. (1/2 Tsp. for each)
  5. Water – ¾ Cup
  6. Red Chilli Powder – 2 Tsp.
  7. Turmeric Powder – 1 Tsp.
  8. Mint & Coriander Chutney – 5 Tbsp.
  9. Oil for Greasing + 1 ½ Tbsp. for Batter (1/2 Tbsp. for each)
  10. Oil for Tadka – 5 Tbsp.
  11. Mustard Seeds – 1 Tbsp.
  12. Curry Leaves – 10-12 Nos.
  13. Roughly Chopped Green Chillies – 5 Nos.

Instructions –

  1. Take suji in a bowl and add in curd and mix.
  2. Keep batter aside for 25 mins.
  3. After 25 mins. add salt in batter and adjust the consistency of it by adding water.
  4. Divide batter equally into three portions.

  6. For green color, add mint and coriander chutney to one portion of batter and mix.
  7. Add ½ tsp. baking soda and mix and transfer batter to greased plate and steam it for 5 mins.
  8. For white color, just add ½ tsp. baking soda to another portion of batter and mix and with the help of spatula spread it evenly on steamed green color and steam it for 5 mins.
  9. For orange color, just add red chilli powder and turmeric powder to third portion of batter and mix and add ½ tsp. baking soda and mix it again.
  10. Again with help of a spatula spread orange color mixture evenly on steamed white color and steam it for 10 mins.CollageMaker_20180126_023507548
  11. After 10 mins. just check with the help of knife whether dhokla is prepared. Just insert knife in it and if it comes out clean that means dhokla is ready and if not then steam it for few more mins.
  12. Allow dhokla to cool down completely and cut it into pieces.
  13. For Tadka – heat oil in a pan and add mustard seeds, curry leaves and roughly chopped green chillies.

Notes –

  1. If your red chilli powder is not too hot and spicy then you can add more of it and if it is too hot and spicy then reduce its quantity and increase turmeric powder quantity.
  2. If you don’t have steamer then you will require four utensils – Deep bottomed vessel, stand, greased plate and cover (which can be anything)
  3. Just fill 3-4 cups of water in a deep bottomed vessel. Put stand in it. Place greased plate on stand and cover it.

Corn and Spinach is a Wonderful combination. You can make variety of recipes from it like different Curries, Snacks, Sandwiches, Stuffed Paranthas, Pastas etc. Today I am going to share with you a recipe of Cheesy Corn and Spinach Sandwich.

Cheesy corn and spinach sandwich is a grilled sandwich, creamy in texture filled with sweet corn and spinach filling. The process to make this sandwich is easy and quick. As it involve cheese, kids going to love this sandwich. You can also pack this sandwich in their Lunch Box.

Quantity of cheese can be adjusted according to your taste. As I love cheese a lot that’s why I have added more quantity of it. If you want to make it healthy you can avoid it also. As butter is used in this recipe, it will give nice creamy texture to the white sauce.

Ingredients

  1. Blanched and Chopped Spinach Leaves – 30
  2. Sweet Corn Kernels – ½ Cup
  3. Butter – 2 Tbsp.
  4. All Purpose Flour – 2 Tbsp.
  5. Grated Processed Cheese – 1 Cup
  6. Milk – 1 Cup
  7. Salt to Taste
  8. Black Pepper Powder to Taste
  9. Oregano – 1 Tsp.
  10. White Bread Slices – 20

Equipment Used – Grill Pan

Instruction –

  1. Heat butter in a pan and add all-purpose flour and mix.
  2. Sauté it until it gets light in color.
  3. Add 1 cup milk gradually and stir continuously to avoid lumps.
  4. Add in grated cheese and mix and cook till the sauce gets thicken.
  5. Now add sweet corn kernels and chopped spinach and mix.
  6. Add in salt, black pepper powder and oregano and mix. (Use salt accordingly as we have added lot of cheese and cheese have salt)
  7. Take two bread slices at a time and spread prepared mixture on one bread and cover it with other bread.
  8. Heat grill pan and apply butter on it.
  9. Place sandwich on it and grill it from both sides.
  10. Cut Sandwich into two pieces and serve it with Tomato Ketchup.

बनाने की विधि
१. एक कड़ाई में बटर गरम करें और उसमे मैदा डालें और मिलाएं।
२. जब तक यह रंग में हल्का नहीं हो जाए तब तक पकाएं।
३. धीरे-धीरे 1 कप दूध डालें और लगातार मिलाएं ताकि कोई गिठाने नहीं बने।
४. कसा हुआ चीज़ डालें और मिलाएं और पकाएं तब तक सॉस घाड़ा नहीं हो जाता।
५. अब सॉस में स्वीट कॉर्न और पालक डालें और मिलाएं।
६. अब नमक, काली मिर्ची पाउडर और ऑरेगैनो डालें और मिलाएं (चीज़ में बहुत नमक होता हैं इसलिए उसी हिसाब से इसमें नमक डालें)
७. एक बार में दो ब्रेड स्लाइस लें और एक ब्रेड पर तैयार मिश्रण फैलाएं और इसे दूसरी ब्रेड से धक लें।
८. एक ग्रिल पैन को गरम करें और उस पर बटर लगाएं और गरम पैन पर सैंडविच रखें।
९. सैंडविच को दोनों तरफ से ग्रिल करें।
१०. सैंडविच को दो टुकड़ो में काटें और टमाटर सॉस के साथ परोसे।

Dahi Ke Kebabs | Curd Cutlets – Recipe No. 66

Today I am sharing with you all a recipe of creamy and soft Dahi ke Kebabs. It is basically a North Indian recipe. It is very easy and yummy recipe which requires a mixture of hung curd, some veggies and spices. Rice flour is used as a binding agent and makes kebab crispy. I have made healthy version of it by shallow frying it. It can be best served as an appetizer with green chutney or tomato ketchup.

Step – by – Step Tutorial of Dahi ke Kebab

 

Serving – 12-15 Kebabs

Ingredients –

  1. Hung Curd – 2 Cups
  2. Finely Chopped Capsicum – ¼ Cup
  3. Finely Chopped Cabbage – ¼ Cup
  4. Chaat Masala – 1 Tsp.
  5. Black Pepper Powder – ½ Tbsp.
  6. Salt to Taste
  7. Rice flour – 4 Tbsp.
  8. Breadcrumbs for Coating
  9. Oil for frying

Method –

  1. Take hung curd in a mixing bowl
  2. Add in finely chopped capsicum and cabbage
  3. Add in salt, chaat masala and black pepper powder.
  4. Add in rice flour and mix all ingredients properly
  5. Make kebabs from dahi mixture (shape and size of kebabs depends on you)
  6. Coat all kebabs with bread crumbs and keep them in a fridge for 15-20 mins.
  7. Now shallow fry all kebabs till both sides turn brown in color.
  8. Serve Dahi ke Kebabs with tomato ketchup and some cabbage salad.

Notes –

  1. Vegetables like onion, carrot, red and yellow bell peppers, beans can also be added.
  2. Spices can be adjusted according to your taste.
  3. Instead rice flour, gram flour can also be added.
  4. You can deep fry or shallow fry kebabs according to your choice.
  5. If the mixture sticks to your hand then add more rice flour.
  6. Apply oil on hands while making kebabs as it will not stick on hands.

Veg Macroni | Macroni in Indian Style – Recipe No. 60

Veg Macroni is a very healthy option for your kids as it includes lot of vegetables. It is a perfect tiffin recipe and evening snack for your kids. Although I am not a kid, I love Veg Macroni a lot. That means veg macroni is perfect for every age group. It is very easy and quick recipe.

Prep Time – 10 Mins.             Cook Time – 15 Mins.                 Serving – 2

Ingredients –

  1. Uncooked Macroni – 1 ½ Cup
  2. Salt – 1 Tsp. + To Taste
  3. Oil – 1 Tbsp. + 4 Tbsp.
  4. Finely Chopped Onions – ½ Cup
  5. Finely Chopped Tomato – ½ Cup
  6. Finely Chopped Capsicum – ½ Cup
  7. Tomato Ketchup – 4 Tbsp.
  8. Red Chilli Powder – ½ Tbsp.
  9. Turmeric Powder – ½ Tsp.
  10. Amchur (Dry Mango) Powder – ½ Tbsp.
  11. Preserved Water (Water in which Macroni is boiled) – ½ Cup

Veg Macroni

Method –

  1. Boil water in a pan and add 1tbsp. of oil and 1 tsp. of salt.
  2. Add macroni in boiled water and cook it until it gets soft.
  3. Strain it with the help of a sieve and keep it aside.
  4. Heat oil in a wok and add onions and cook them for 2-3 mins.
  5. Now add capsicum and cook them also for 2-3 mins.
  6. Add tomatoes and cook all vegetables for 5 mins.
  7. Add in tomato ketchup, salt, red chilli powder, turmeric powder and amchur powder and mix them properly with vegetables.
  8. Add preserved water.
  9. Add boiled macroni and cook it for 5 mins.
  10. Veg Macroni is ready to serve

Tips –

  1. Oil and salt is added at the time of boiling of water so that macroni don’t get stick to each other.
  2. If you don’t eat onion, can easily skip it and instead of it you can use red and yellow bell peppers or any other vegetable as you like.
  3. Spices can be adjusted according to your taste
