Veg. Burger | Veggie Burger | Recipe No. 110

Veg Burger is a popular snack recipe in India. Although its origin is not India but it is the most liked snack recipe which is very popular among all age groups. It can be a perfect party snack which can be served with French fries or potato chips and different mocktails and cocktails.

You can get burgers easily at different food joints but the burgers prepared at home taste far better as compared to the burgers available at food joints. It is extremely easy to prepare burgers at home. Process includes two easy steps – First step is to prepare veg pattie and second step is to assemble the burger.

Pattie which I have prepared here is a mix vegetable pattie whose main ingredient is potato. Other vegetable which I have used is peas and carrot. You can also use beans and soya. Infact instead of potato, soya can also be used as a main ingredient for pattie. It will be a healthy option.

Serving – 8 Burgers

Ingredients –

For Potato Pattie

  1. Boiled and Mashed Potatoes – 3 Cups
  2. Green Peas – ¾ Cup
  3. Grated Carrot – ¾ Cup
  4. Breadcrumbs – 2 Cups
  5. Salt to Taste
  6. Garam Masala – 2 Tsp.
  7. Red Chilli Powder – 4 Tsp.
  8. Oil for Shallow Frying

Other

  1. Burger Bun – 8
  2. Oil
  3. Cheese Slice
  4. Mayonnaise
  5. Hot and Sweet Chilli Sauce
  6. Sliced Tomatoes
  7. Sliced Onions
  8. Cabbage Leaves
  9. Potato Chips
  10. Some Toothpicks

Instructions –

  • Take boiled and mashed potato in a mixing bowl and add in green peas and grated carrots.
  • Add in breadcrumbs, salt, red chilli powder and garam masala and mix all ingredients properly.

  • Now make medium size patties from the potato mixture.
  • Heat oil in a pan and shallow fry all patties till they are golden brown from both sides.

  • Slit burger bun from middle and toast both part from both sides with the help of oil.

  • Now take bottom side of burger bun and apply some mayonnaise on it.
  • Place one cabbage leaf on it and top it with onion and tomato slice.
  • Place potato pattie and cheese slice on it and again top it with onion and tomato slice.
  • Apply some hot and sweet chilli sauce on another part of the burger bun and place it on onion and tomato slice and seal the burger with toothpick.

  • Serve Veg Burger with some potato chips and tomato ketchup.

Strawberry Smoothie | Recipe No. 109

Smoothie is a thick and cold beverage which is prepared from fruits or vegetables blended with ice cream or yogurt. Smoothies are very healthy recipe as they include large serving of fruits and vegetables. Strawberry smoothie is one of the smoothie which is very healthy as well as tasty also as it includes goodness of strawberries.

Serving – 4

Ingredients –

  1. Strawberry (Fresh or Frozen) – 5-6
  2. Curd (Yogurt)– 2 Cups
  3. Milk – 1 Cup
  4. Sugar to Taste
  5. Strawberry pieces for garnishing

Instructions –

  1. Just take a blender and add in strawberry, curd, milk and sugar one by one and blend them all together until smooth and creamy.
  2. Pour smoothie into individual glasses and garnish it with some strawberry pieces and serve chilled.

Notes –

  1. Most important thing to be taken care of while preparing smoothie is that the curd and milk which are used should be cold.

Palak Paneer | Recipe No. 108

Palak Paneer is basically an Indian Curry in which paneer (cottage cheese) cubes are cooked with spinach curry. Palak Paneer is one of the most popular North Indian Dishes which can be easily found in every Indian Restaurant especially dhabas.

This recipe of Palak Paneer is my mom’s recipe. I have prepared this recipe by blanching spinach as it will give nice green color to the recipe. It can be prepared without blanching spinach also. But I will recommend blanching for this particular recipe.

This recipe of Palak Paneer goes perfect with hot chapattis, naan, tandoori rotis and even rice also.

Ingredients –

  1. Palak (Spinach) – 250 Gms.
  2. Paneer (Cottage Cheese) – 150 Gms.
  3. Medium Sized Tomatoes – 3 Nos.
  4. Medium Sized Onions – 3 Nos.
  5. Garlic Cloves – 3-4 Nos.
  6. Green Chilli – 2 Nos.
  7. Asafoetida – Pinch
  8. Fennel Seeds – ½ Tsp.
  9. Cumin Seeds – ½ Tsp.
  10. Red Chilli Powder – 1 ½ Tbsp.
  11. Coriander Powder – 1 Tbsp.
  12. Turmeric Powder – ½ Tsp.
  13. Salt to Taste
  14. Garam Masala – ½ Tbsp.
  15. Oil – 4 Tbsp.

Instructions –

  • Boil water in a pan and add spinach leaves in it and blanch it.
  • Allow blanched spinach leaves to cool down completely and blend it to a fine puree.

  • Grind tomatoes, onions, garlic and green chillies to a fine paste.

  • Cut paneer into small cubes and deep fry them until its color changes to golden brown.

  • Heat oil in a wok and add in asafoetida, fennel seeds and cumin seeds.
  • When seeds crackle add in grounded paste prepared in step 3 and allow it to cook.
  • When oil leaves the sides of the wok, add in red chilli powder, coriander powder, turmeric powder, salt and garam masala.
  • Add ½ cup of water and allow all spices to cook.
  • Add in spinach puree and mix it with spices properly and allow it to cook.
  • When one boil comes add in deep fried paneer cubes and give a quick mix and switch off the flame.

  • Palak Paneer is ready to be served with hot chapattis.

Veg Mayonnaise Sandwich is one of the healthy options among all veg sandwich recipe. It is very easy recipe that can be prepared in very few minutes with very few ingredients. It can be a perfect healthy breakfast recipe. These sandwiches can also be served with evening tea or can be packed in kid’s lunch box. These sandwiches are prepared without toasting bread but if you want you can toast the bread (For that first toast the bread and then spread the mixture). I have used basic eggless mayonnaise but if you want you can use any type of flavored mayonnaise also.

Serving – 8 Sandwich

Ingredients –

  1. Finely Chopped Cabbage – 1 Cup
  2. Grated Carrot – 1 Cup
  3. Sweet Corn Kernels – ½ Cup
  4. Veg Mayonnaise – 1 Cup
  5. Lemon Juice – 1 Tsp.
  6. Salt to Taste
  7. Black Pepper Powder – 1 Tsp.
  8. Bread Slices – 16 Slices

Instructions –

  • Take veg mayonnaise in a big bowl and add all ingredients (except bread slices) in it and mix well and prepare a mayonnaise mixture.

  • Cut edges of the bread and take two bread slices at a time.
  • Spread mayonnaise mixture on one slice and cover it with another slice.
  • Cut sandwich diagonally into two parts.

Notes –

  1. Vegetables like onion, green, yellow or red bell pepper can also be added. One can add vegetable as per choice.
