Palak Dhokla | Healthy Spinach Dhokla | Recipe No. 95

Dhoklas are in itself very healthy recipe which you can have in your breakfast or as a snack. It is an all-time favorite Gujarati Snack item. There are many varieties of dhokla which can be prepared like Sandwich Dhokla, Khatta Dhokla, Tricolor Dhokla etc. New variety of dhokla recipe which I am sharing today is Palak Dhokla. I am making dhokla recipe healthier by adding one more healthy ingredient i.e. Spinach Leaves (Palak). As we all know spinach is full of Vitamins and Minerals so we must include it in our diet. We can have spinach in any form like soup, curry, raitas etc.

Serving – Will Serve 4-5 People

Ingredients –

  1. Rice – 1 ½ Cups
  2. Chana Dal (Split Bengal Gram) – ½ Cup
  3. Urad Dal (Black Gram, Split and Skinless) – ¼ Cup
  4. Yogurt (Curd) – 1 Cup
  5. Water – ½ Cup
  6. Spinach Leaves – 10 -12 Nos.
  7. Green Chillies – 2 Nos.
  8. Salt to Taste
  9. Red Chilli Powder – 2 Tsp.
  10. Asafoetida – Pinch
  11. Fruit Salt (Baking Soda) – ½ Tsp.
  12. Oil – 1 Tbsp. + 4 Tbsp. for Tadka
  13. Mustard Seeds – 1 Tbsp.
  14. Curry Leaves – 10-12 Nos.

Instructions –

  1. Wash rice, chana dal and urad dal with clean water and soak them overnight.
  2. Transfer soaked ingredients in a grinder and add in curd and water and grind them (Batter should be of flowing consistency).
  3. Transfer batter in a bowl and keep it at a warm place for fermentation for atleast 5-6 hours.
  4. Boil water in a pan for blanching of spinach leaves.
  5. Add spinach leaves in a boiled water and leave it for 10 minutes.
  6. After 10 minutes transfer leaves in an ice water for 5 minutes.
  7. Take a grinder and add in blanched spinach leaves.
  8. Add in roughly chopped green chillies and grind them to make a fine puree.
  9. Add puree in a fermented batter and mix.
  10. Add in red chilli powder, salt and asafoetida and mix.
  11. Add in oil and mix.
  12. At the time of pouring the batter in a greased plate, just add soda and mix.
  13. Fill heavy bottomed vessel with 2 glass of water and keep stand in it and place greased plate on it.
  14. Pour the batter in a greased plate and cover it and start steaming it for atleast 20 minutes.
  15. After 20 minutes. just check dhokla by inserting knife. And if knife comes out clean that mean dhokla is ready and if not then steam it for few more minutes.
  16. Allow dhokla to cool down completely and then cut it into pieces.
  17. For tadka, heat oil in a pan and add in mustard seeds.
  18. When seeds crackle add in broken curry leaves.
  19. Drizzle tadka on a dhokla and serve.

Notes –

  1. If you want you can add ginger garlic paste also in the batter. It will give nice taste to the dish.
  2. Always wash leafy vegetables with clean water for 2-3 times before using them in any recipe.
  3. Use sour curd for making the batter.
  4. Adjust quantity of green chilli according to your taste.

DAL THEPLA – Recipe No. 19

Thepla is a Gujarati Snack. There are different types of Thepla which are made in all over India such as Methi (Fenugreek Leaves) Thepla, Dal (Lentils) Thepla, Lauki (Bottle Gourd) Thepla etc. Today I am making Dal Thepla.

It is a best way to use leftover dal at our home. At my home it is cooked when we have to travel for long. It is very light and healthy.

It is a best food for Vegetarians to take if you are going to a place where veg. food is difficult to get because it stays good for 2-3 days.

It is one of the best breakfast recipes on the day when you have little time as it can be prepared quickly.

It is very useful recipe for kids who don’t eat vegetables because Frankie or rolls can be made from Thepla with different Vegetable fillings and with different kind of sauces.

Equipment Used

  1. Pressure Cooker
  2. Flat Pan
  3. Rolling Pin
  4. Measuring Cups

Prep Time – 30 Mins      Cook Time – 15 Mins        Total Time – 45 Mins                         Serving – 4

Ingredients –

  1. Split Green Gram with Skin (छिलका मूंग दाल) – ¾ Cup (Turn Organic Moong Split Chilka, 500g)
  2. Wheat Flour (गेहूं का अट्टा)– 1 ¼ Cups
  3. Gram Flour (बेसन)– 1 Cup (24 Mantra Organic Besan (Gram) Flour, 500g)
  4. Red Chilli Powder (लाल मिर्ची पाउडर) – 4 Tbsp.
  5. Turmeric Powder (हल्दी) – 1 Tsp.
  6. Salt to Taste (नमक)
  7. Cumin Powder (जीरा पाउडर) – ½ Tbsp.
  8. Carom Seeds (अजवाइन) – ½ Tbsp.
  9. Oil (तेल) – 2 Tbsp. + For Greasing
  10. Water as required for Kneading Soft Dough (पानी)

Method –

  1. Wash and clean dal for 2-3 times.
  2. Transfer dal in pressure cooker and pressure cook it until dal gets soft.
  3. Now take a bowl and add in wheat flour, gram flour, cooked dal, red chilli powder, turmeric powder, salt, cumin powder, carom seeds and 2 tbsp. of oil and knead Soft dough with the help of water.
  4. Keep dough aside for 15 – 20 mins.
  5. Divide dough into 10 equal balls
  6. Roll out each ball into thin chapattis with the help of rolling pin.
  7. Heat flat pan and put Thepla on it and cook both sides with the help of oil.
  8. Serve Theplas with Curd. (Theplas can be served with Tomato Ketchup, Mango Pickle or Mint &Coriander Chutney)

Paryushan Parv Recipe No 5 – Khatta Dhokla

Khatta Dhokla is another variety of Dhokla which is a Traditional Gujarati Snack.It is very light and easy to make. It is prepared from rice and different lentils which are grinded with the help of sour curd to make fine batter.

Khatta Dhokla is a very common dish which my mother used to make a lot but this time I have made it and it was my first attempt and it came out to be awesome.

Equipment Used –

  1. Steamer
  2. Grinder
  3. Tadka Pan
  4. Measuring Cups

Prep Time – 8 Hours       Cook Time – 30 Mins        Total Time – 9 Hours 30 Mins               Serving – 8

Ingredients –

  1. Rice (चावल)– 3 Cups
  2. Split Bengal Gram (चना दाल) – 1 Cup
  3. Split Black Gram (उड़द दाल ) – ½ Cup
  4. Sour Curd (खट्टा दही)– 1 ½ Cups
  5. Salt to Taste (नमक)
  6. Soda Bi-Carb (खाने का सोडा) – 1 Tsp.
  7. Oil (तेल) – 6 Tbsp. for Tempering + 1 Tbsp. or as required for greasing
  8. Mustard Seeds (राई) – 1 Tbsp.
  9. Red Chilli Powder (लाल मिर्ची पाउडर)

Method –

  1. Wash rice and both lentils properly with water for 2-3 times and soak them in clean water for overnight.
  2. Now take a grinder and grind rice and lentils with curd and water around ½ Cup and prepare a smooth batter.
  3. Allow the batter to rest for 8 hours in warm place.
  4. Now divide the batter into two big bowls.
  5. Grease steamer plates with oil and heat water in steamer on medium flame
  6. Now take the batter of one bowl and salt and ½ tsp. of soda and mix well.
  7. Now place greased plate in steamer and add batter in which salt and soda is already there upto ¼ of the plate capacity.
  8. Now sprinkle red chilli powder on the batter.
  9. Cover the steamer with the lid and allow to steam. (It will take around 15 mins to steam)
  10. After 15 mins, insert a knife and check whether it is coming out clean and if not then steam for few more mins.
  11. After steaming allow it to cool down and cut it into small pieces
  12. Now heat oil in tadka pan and add mustard seeds and allow it to crackle.
  13. Pour tempering on dhokla pieces in such a way that all dhokla pieces are covered by it properly.
  14. Serve it with fried Green Chillies.

Tips

  1. For making tempering White Sesame Seeds, Curry Leaves and Coriander Leaves can also be used. It will give nice color to our Dhoklas.
