LAUKI (BOTTLE GOURD) KOFTA CURRY – Recipe No. 32

Lauki i.e. Bottle Gourd is a very popular vegetable which can be found in every household. Lauki is healthy vegetable also. Lauki juice is very beneficial in reducing weight. There are many food items which can be prepared from Lauki i.e. lauki ka soup, lauki ka parantha, lauki ke muthiya, different types of lauki ki Subzi etc. Today I am making Lauki Kofta Curry which is a kofta made from grated lauki simmered in a tomato gravy.

Ingredients

For Lauki Kofta

  1. Grated Lauki – 2 Cups
  2. Gram Flour – 1 Cup
  3. Red Chilli Powder – 1 Tbsp.
  4. Salt to Taste
  5. Asafoetida (Hing) – Pinch
  6. Turmeric Powder – ½ Tsp.
  7. Oil – 1 Tbsp.
  8. Oil for Frying

For Curry

  1. Soaked Cashew Nuts (soaked for 4 hours) – 10
  2. Tomato – 3
  3. Green Chilli – 3
  4. Oil – 6 Tbsp.
  5. Asafoetida (Hing) – Pinch
  6. Mustard Seeds – 1 Tsp.
  7. Cumin Seeds – 1 Tsp.
  8. Fennel Seeds – 1 Tsp.
  9. Curd – 3 Tbsp.
  10. Cream – 3 Tbsp.
  11. Red Chilli Powder – 1 ½ Tbsp.
  12. Turmeric Powder – ½ Tsp.
  13. Coriander Powder – 2 Tsp.
  14. Salt to Taste
  15. Kasuri Methi – 3 Tsp.
  16. Water – 1 ½ Cup

Method –

  1. Take a mixing bowl and add in grated lauki, gram flour, asafoetida, red chilli powder, turmeric powder and salt and mix well to prepare a kofta mixture.
  2. Shape mixture into small circle shape or oval shape koftas.
  3. Deep fry koftas.
  4. Now prepare a paste of tomato, soaked cashew nuts and green chillies.
  5. Heat oil in a wok and add in asafoetida, mustard seeds, fennel seeds and cumin seeds.
  6. On crackling of seeds add in prepared paste and cook for 2-3 mins.
  7. Add in cream
  8. Add in salt, red chilli powder, coriander powder, turmeric powder and kasuri methi and mix all spices well.
  9. Add curd and stir continuously.
  10. Add water and cook curry till one boil.
  11. Add in lauki koftas
  12. Lauki Kofta Curry is ready to be served with Chapatti, Naan and Parantha.

Tip – I have made it without onion and garlic. It can be made with onion and garlic also. Just add small pieces of onion and garlic cloves while making a paste of tomato, cashew nuts and green chilli.
